Rainy Tuesday shares

It’s another rainy Tuesday here in northern VA.  How about you?  What’s your weather like?  I know in western MA they’re enjoying some rain today also.  I know this because I spent some of my morning delaying myself from work by socializing with one of my three amigos via email.  It was so sweet receiving her “check in” email this morning, and all those we pinged back and forth afterward.

I have a question.  Did you feel the effects of the super moon this weekend?  My amigo and I sure did.  Yesterday we were both in an emotional funk of uncertainty many miles apart from one another, and without even knowing this until the end of the evening.  It was like I woke up on the wrong side of the bed, or moon.  I had a ton of negative energy cultivating within me and I just had no explanation for it what so ever.  Weird, right?  Maybe you experienced some of it too.

There is nothing we like to see so much as the gleam of pleasure in a person’s eye when he feels that we have sympathized with him, understood him. At these moments something fine and spiritual passes between two friends. These are the moments worth living.

This morning, as I was delaying life a bit, I cleaned up my inbox.  I generally don’t keep emails very long, but some I had neglected to purge.  As I was cleaning through them, I found one that I have often wanted to share.  I enjoy doing as much as I can to create less garbage in the world.  I don’t have lots and lots of stuff anymore either.  I try to lead a fairly green life.  This list, 20 plastic things you didn’t know you can recycle, is one I often forget about.  But, I read through it again today and created another recycling bin for the house.  I’m sure hubby will be thrilled!  :)    I had totally forgotten that you could recycle the lids from plastic jars and caps from bottles like seltzer water.  I always despise throwing away those items because I know how they end up in places like the ocean and in the bellies of animals.  So, one more bin for the house.  Check out the list!

Let me just stray in thought here for a moment.  So, on the 20 list, one of the things to recycle is sneakers.  I just want to get you thinking about this for a moment or two.  Do you know how awesome it is to recycle your sneakers?  Places like Nike have been doing this for years.  I once walked on a playground that had a material on it that was made from recycled sneakers and it was so cool.  It’s so easy to recycle sneakers too.  When I was purchasing my son a new pair of Puma sneakers last week, we walked into the Converse store to also look for my daughter a new pair of kicks.  They had a bin there where I was able to dispose of my son’s old worn sneakers and they recycled them.  My local market, MOMS, also as a bin for collecting shoes and they will recycle them too.  My point, there is probably a store near you that has a bin and you can recycle your sneakers too!

Alright, now let’s focus on some food shares.  You know I absolutely love to share about food.  This weekend I made some rice crackers.  I used the recipe, Brown Rice Crackers  , from a site I had stumbled upon.  The overall flavor is a bit bland.  My suggestion would be to add a seasoning beyond sea salt.  I made my second batch with a blend of onion and garlic powder sprinkled on top.  We really liked them all, but the second batch was better.  I wouldn’t rank them as a favorite for me, but for a gluten free cracker they are tasty.

Another good gluten free cracker is from The Kind Life  .  I made them gluten free as stated and they are a hit.  I think I may try them with almond flour and spelt flour, as one reader commented on the site.  I think my son would like the flour taste better, so I think I will try that out also.  Since my son is always eating a cracker of some sort, I am always trying to find recipes to make them and save on having to purchase them.  I also appreciate the notion of baking it myself and having fewer ingredients in the cracker.

Stay tuned to see how these two recipes turn out.  The first is a reconstructed goldfish cracker  .  It’s gluten free too.  If I allowed my son to eat Goldfish crackers, he probably would all day long.  My mom usually purchases them for him, since she knows I won’t yell at her for being a grandma.  Now, if the recipe comes out well, I’m set to change his appetite.  Next recipe I’m going to try to attempt this coming weekend is for Gluten Free Eg Free Pasta Dough  .  I want to make the toasted raviolis that Heidi from Adventures of a Gluten Free Mom   made.  My kids love toasted raviolis, but I usually cheat and purchase an already made gluten free brand from the frozen section.  Now I can try and make my own, which will be much more fresh than from the frozen section!  I’ll let you know how it goes.

So, I’ve talked about making my own wontons (or egg rolls) before.  Usually hubby and I would tag team that meal.  But, hubby works a bunch now and isn’t usually available to cook with me anymore.  But, Sunday was a different story.  I decided to flip up the egg roll ingredients.  I have always seen this recipe for South of the Border egg rolls in my wonton wrapper package.  It’s a recipe I have always wanted to try.  Sunday was the day for it too!

The kids snubbed their noses to the notion of having their “tacos” in the form of an egg roll.  But, let me tell you, these are a winner!  I didn’t use chicken, but rather ground turkey.  I also omitted the corn and jalapeno peppers that the recipe called for, as well as adding in yellow onion instead of green.  If you want the recipe, let me know.  They are super yummy and kid approved!

Lastly, I want to share that I am on week 3 of my workout routine.  I will admit that I have more energy, and am fitting better into my clothes.  It’s a tough program, but well worth all the energy I’m putting into it.  I will admit that I am also sleeping better at night now too!  I love working out, even on days when I have to dig deep to muster the energy to fit it in.  Much like the Tuesday I was experiencing here today!

Inspiration, epiphanies and shares

WOW!  I can’t really believe a week has gone by and I haven’t posted about anything.  I guess my prediction of being busy really has taken over.  Life can be crazy like that, you know?  I’ll expand on my thoughts of being busy and about the epiphanies I’ve been having this week.  Hopefully I’ll be able to provide some inspiration along the way today, since I’ve been trying to do that since I started this blog.

Before I get all long winded and philosophical, let me just tell you how amazed I am at life and all of our connections.  I’ve actually watched a few episodes of The Baby Story on TLC this week, while eating my lunch.  Several months back I was having those maternal cravings for wanting a baby in the house again.  The kids told me I was crazy and hubby said I missed the boat.  Hubby also told me that was what kittens and puppies were for.  So, I slowly processed why I was feeling that way and realized it was all just because I was home alone now and the family was out being independent.  I wasn’t used to that scenario, so having someone to depend on me again made sense.  Let me tell you, after watching the three episodes I have this week, I’m happy to say I like my life just the way it is.

As we prepare to celebrate my son’s 9th year of life in less than two short weeks, I’ve been walking down memory lane.  Yesterday I spent an hour looking through old photos of my life with the family.  I’ve become more and more grateful for the blessing of being a mother every day.  What a gift life truly is!

Life is also springing up in other ways around me recently.  This is where all the connections and stuff comes from.  Every morning I head out on the deck to check on my veggies, herbs and flowers I’m growing out there.  I swear, I think I could have the deck completely covered in containers if I knew I could still move around it all.  I am in love with seeing my plants grow more and more each day.  It truly fascinates me!  I go through this every year, but even so, it just fascinates me.  So much so that I have more pictures for you.

The fact that I can plant a seed and it becomes a flower, share a bit of knowledge and it becomes another’s, smile at someone and receive a smile in return, are to me continual spiritual exercises.

I was talking to my mom today (she called).  I was telling her about the gardens  and she made a comment that stuck with me.  She said she always thought of gardening as somewhat spiritual.  She said she was always amazed that you could take a small seed, put it in the ground, have faith, and then life began.  She said she too was always thrilled to walk out to the garden after a hard day at work and be able to see growth in a plant, or pick some vegetables to be able to feed our family.  For years I’ve always thought my crazy love of gardening came from my father, but I suppose my mother shares that same passion too.  Connections are so wonderful!

When people go within and connect with themselves, they realize they are connected to the universe and they are connected to all living things.

Now, onto a share or two.  You know I love to share about food, which is what I am about to do.  Last week we decided to have souper week, which was a week composed of soups and stews for dinner.  I think I might have told you that already.  Anyway, we had one stew which I still haven’t shared and it’s so worth sharing.  What I made was a Moroccan vegetable stew from How Sweet It Is, but mine was a bit more like a soup.  Since I couldn’t find a fresh butternut squash, I used frozen and the package didn’t give me enough squash.  But, I made the most of it and it was super delicious.  I encourage you to try it! The kids loved it too!

As you know, if you read my blog, I tend to eat like a flexitarian.   We eat a bunch of veggies, love our raw green smoothies, but do indulge in the occasional meat and fish meal.  Hubby loves meat!  So, we try and keep everyone happy.  In doing that, I am also very open minded about food and trying new things.  I’m constantly looking for new recipes to try and love variety.  I happened to stumble upon an article recently about Alicia Silverstone.  I was reading about her and her journey with food.  From the article I hopped on over to her blog, The Kind Life.  What a very interesting blog, which great ideas, links, recipes and discussions.  From there I headed to my library to see if they had a copy of her cookbook, The Kind Diet.  I now have a copy in my kitchen, borrowing from the library though.

The other day I decided to make the Crispy Peanut Butter Treats with Chocolate Chips.  Oh my!  I altered the recipe by using almond butter though.  But still, oh my!  My family is in heaven!  Thank you Alicia!  I never told the kids that they are made with almond butter, since my daughter claims she doesn’t like it.  She loved those almond butter cookies I made previously, and now she loves these too. 

  Tomorrow I’m going to try and make her Vegan Herb Crackers.  I’ll be sure to let you know just how they come out.  I’m sure they will be delicious!

Well, I’m now finishing my second week of workouts in my new 12 week program.  I can not believe that I am as focused as I am.  It’s such a beautiful thing.  Last week I completed the week, with having worked out 6 days in a row.  As long as I get my workout in tomorrow morning, I’ll have completed a second week of 6 days in a row.  I am loving it!

The first requisite of success is the ability to apply your physical and mental energies to one problem without growing weary.

Yesterday as I was riding the bike in the cool garage, loving the crisp, cool air, it hit me dead in the face.  What hit me, you ask?  My largest epiphany yet about this part of my journey.  I realized that come July 1, the one year anniversary of being without a job, that my journey will continue.  It won’t stop there, since I still have a ways to go with this part.  Although this part of my journey will continue, I’m finally excepting it for what it is.  Finally!

14 months ago my doctor back in MA told me I had to do several things in my life daily, in order to get better and make it to 50 years old.  I laughed, I cried and I thought it wasn’t even going to be possible.  Yesterday, as I was tasting the sweat running down my face, I realized I was doing it.  I was living the life my doctor told me I needed to live.  I am sweating for an hour ever day, taking an hour to be completely alone, letting go of everyone elses’ needs and asking them to work alongside of me, having down time to work on myself.  I am doing it all.  Every day I take a nap for at least 20 minutes, I’m alone most days for at least 6 hours, I’m working out sweating for 60-75 minutes 6 days a week, and I’m doing the things I love most: sewing, cooking/baking, reading and listening to music.  I can’t believe it took me 14 months to really figure it out, but I have.

Today is a new day. You will get out of it just what you put into it. If you have made mistakes, there is always another chance for you. And supposing you have tried and failed again and again, you may have a fresh start any moment you choose, for this thing we call “failure” is not the falling down, but the staying down.

I’m grateful for the opportunity to do this for myself, since I had really forgotten about myself.  I suppose that’s the story for many people, really.  Sadly, we get caught up in the trap of working, parenting, and keeping up with the Jones that we forget to take care of ourselves.  We allow too many unimportant things get in the way of living, really living.  I am very grateful, for my life, and the ability to become strong again.  Heck, I’ll even throw in stronger now.  I am coming back this time with muscles that I didn’t know even existed.  It’s actually pretty cool!

I could go on and on about the moment it hit me yesterday.  While I had sweat pouring off me, releasing all kinds of toxins out of my body, imagining myself biking up a large hill.  I was listening to AC/DC at the time.  I love AC/DC.  Eyes closed, hot, sweating, hard rock playing in my ears and suddenly my doctor appears.  She had a smile on her face, pleased to see me working so hard.  She said, “Now you’re turning back the clock for sure!”  Crazy?  Possibly, but it put a huge smile on my face and made the light bulb go off above my head.

What ever your journey is: finding a job that you really love, creating a way to pay off your debt, losing some weight so you can fit into a pair of pants you haven’t worn in two years (that was me yesterday), or getting a better grasp of your health, remember it’s a journey and it takes time.  Nothing happens overnight.  We all suffer and have hardships in life to deal with along the journey.  But, everything we manage to move forward through only makes us stronger, happier and more fun to be around!

Obstacles don’t have to stop you. If you run into a wall, don’t turn around and give up. Figure out how to climb it, go through it, or work around it.
